  • 12 lamb cutlets trimmed
  • 1 cup lime marmalade
  • 2 tablespoons reduced salt soy sauce
  • olive oil cooking spray
  • 1 bunch baby carrots trimmed
  • 1 bunch baby bok choy trimmed halved

  • place cutlets into a ceramic dish spoon over combined soy sauce and marmalade turn to coat cover refrigerate for 1 hour
  • preheat a frying pan on medium high spray with oil cook lamb basting with marinade 4 minutes each side for medium
  • half fill a frying pan with water bring to the boil over high heat add carrots cook for 2 to 3 minutes until tender remove bring water to the boil again add bok choy cook for 1 to 2 minutes until wilted
  • serve cutlets with carrots and bok choy
