  • 60mls 1 4 cup olive oil
  • 1 200g pkt swiss brown mushrooms sliced
  • 120g button mushrooms sliced
  • 2 teaspoons finely chopped fresh oregano
  • salt ground black pepper
  • 8 lcm thick slices ciabatta bread
  • 2 garlic cloves halved
  • extra fresh oregano leaves to garnish

The Instruction of mushroom crostini

  • heat 40mls 2 tablespoons of the olive oil in a medium frying pan over medium heat add the mushrooms and cook stirring occasionally for 4 5 minutes or until tender see microwave tip stir in the oregano and season with salt and pepper keep warm
  • preheat a chargrill or grill on high lightly brush the bread slices on both sides with the remaining olive oil grill the bread on the preheated chargrill or under grill for 1 2 minutes on each side or until golden rub one side of the toasted bread with the garlic and season with salt and pepper top the toasted bread with the mushroom mixture and serve immediately garnished with extra flesh oregano leaves
